This is the classic spice blend used to flavour steamed or pilau rice in Kenya. Yes, you can buy Kenyan pilau marsala on-line easily enough, but this spice blend, like most blends tastes much better (and is much cheaper if you make it yourself.

Ingredients:

1 cinnamon stick
1 tbsp cumin seeds
6 whole cloves
5 cardamom pods (seeds only)
2 dried chillies
6 black peppercorns

Method:

Break the cinnamon into pieces. Combine either in a mortar or a coffee or spice grinder and render to a fine powder. Store in an air-tight jar in a cool, dark, place. Use 1/3 of the spice mixture for every 210g (1 cup) rice.

The quantities above are enough for 600g (3 cups) of rice.
