Kenyan Kima (Chopped Beef Chilli-fry)

Kima is made throughout north-eastern Africa. Essentially it's chopped beef in a spiced stock made with evaporated milk. It can be made either with or without curry powder. Sometimes the curry-spiced version is called 'Chopped Meat Curry'.

Ingredients:

100g onions, finely chopped
1 tsp garlic powder
1 tsp curry powder
1/2 tsp hot chilli powder (or more, if liked)
1 tsp mixed herbs
1/2 tsp freshly-ground black pepper
75g shredded coconut
120ml oil or butter
1kg beef, finely chopped
120ml evaporated milk
500ml water
120ml passata (tomato juice)
60ml fresh lemon or lime juice
1 Maggi cube (or 2 tbsp soy sauce)
salt and freshly-ground black pepper, to taste

Method:

Heat the oil in a large pan or flame-proof casserole. Add the onions, garlic powder, curry powder, chilli powder, mixed herbs, black pepper and shredded coconut. Fry, stirring frequently, for about 5 minutes, or until the onions are soft and translucent.

Add the meat to the pan and continue stir frying for about 8 minutes, or until the meat is browned all over.

Now add the evaporated milk, water, passata and lemon juice. Crumble in the Maggi cube (or add the soy sauce) and bring to a simmer. Cover the pot and cook for 20 minutes.

Adjust the seasonings to taste then turn the mixture onto a serving platter. Surround with a border of rice and bring to the table.
