This is the classic Kenyan recipe for a home-made chilli tomato sauce that's part way between a relish and a sauce and which is used commonly as an accompaniment to many dishes.

Ingredients:

1 Kg (2 lbs) Ripe Tomatoes, chopped into halves
4 Fresh Red habanero chillies, minced
2 Garlic cloves, finely chopped
1/2 onion, finely diced
1/2 tsp Ground Paprika
60ml (1/4 cup) Vinegar
2 tbsp brown sugar
1 tsp Cornflour (cornstarch)
2 tsp Water
2 tsp oil for frying
Salt, to taste

Method:

Combine the tomatoes and garlic in food processor. Pulse to chop then puree until smooth.

Heat the oil in a pan, add the onion and fry for about 3 minutes, until soft and translucent. Add the chillies and garlic and fry for 1 minute then stir in the tomato puree.

Continue cooking over medium heat until the tomato mixture begins to darken (about 12-15 minutes), stirring frequently during this time.

Dissolve the cornflour in the water and vinegar then stir into the sauce along with the sugar. Continue cooking for a few minutes until thickened to your liking. Adjust the seasoning to taste.

Ladle the sauce into sterilized jars that have been warmed in a low oven. Secure a lid, allow to cool completely then label and store in a cool, dark, place. Once opened store in the refrigerator.
