The cane rat is one of Africa's largest rodents. It is an agricultural pest and is hunted for bush meat. Recently there have been efforts to farm it as mini livestock, particularly in Ghana and Nigeria.

Ingredients:

1 prepared cane rat (grasscutter), cut into serving pieces
6 large prawns, peeled
2 tsp salt
7 cloves garlic, minced
2 tsp paprika
2 tbsp olive oil
2 onions, diced
4 large tomatoes, puréed
1 tbsp tomato paste
120ml water
2 scotch bonnet chillies, chopped
1 tsp cinnamon
1 tsp nutmeg
1 tsp turmeric
300g long-grain rice
700ml chicken stock
240ml white wine
chopped parsley to garnish

Method:

Marinate the cane rat pieces and prawns with the salt, 1 clove minced garlic and the paprika for 2 hours in the refrigerator.

When ready fry the onions and garlic in the olive oil in a large pan. Add the cane rat (reserve the prawns), tomatoes, tomato paste, chillies, spices and cook for five minutes. Add the rice and the liquid ingredients and bring to the boil Reduce to a simmer and cook for about 50 minutes, or until the meat is done.

Add the prawns and cook until they turn pink then serve immediately.
