Ingredients:

1 batch of kebbe
750ml yoghurt
1 tbsp cornflour (cornstarch)
100g long-grain rice
4 garlic cloves, mashed
4 tbsp fresh coriander (or mint), finely chopped

Method:

Prepare the kebbe according to the recipe, and cook by deep frying or baking.

Bash the rice thoroughly and drain. Bring a pan of lightly-salted water to a boil, stir in the rice and cook for about 15 minutes, or until just tender. Drain in a sieve and set aside.

Whilst the kebbe are cooking, pass the yoghurt through a sieve. Transfer to a large pan and whisk in the cornflour until smooth. Cook over low heat, stirring constantly, until it begins to boil. Stir in the rice as this point then add the cooked kebbe.

Heat a little oil in a pan, fry the garlic until golden, add the coriander (or mint) and stir into the yoghurt sauce.

Serve immediately, accompanied by the rice.
