Kebapcheta (Bulgarian Barbecue Sausage) is a traditional Bulgarian recipe for a classic barbecue sausage of minced pork and beef combined with onion and cumin that are shaped into sausages and cooked on a barbecue. Ingredients:
600g minced pork
400g minced beef
2 small onions, very finely chopped
2 garlic cloves, finely chopped
1/2 tsp ground cumin
2 tsp freshly-ground black pepper
sea salt, to taste
Method:
Mix the meat in a bowl, season with salt then set in the refrigerator to marinate for 2 hours. After this time mix the onions, garlic, cumin and black pepper into the meat. Add a little water, if required then cover the bowl and refrigerate for 2 hours more.
Remove from the refrigerator then shape the mixture into elongated meatballs. Either thread onto skewers or cook directly on a hot barbecue or under the grill (broiler). Serve hot with a dipping sauce and griddled vegetables.
