Ingredients:

1kg beef, cut into bite-sized cubes
2 onions, finely chopped
1 tsp ground cinnamon
2 tbsp plain flour
6 garlic cloves, crushed
4 tbsp oil for frying
salt and freshly-ground black pepper, to taste

Method:

Combine the flour, cinnamon, salt and black pepper on a plate. Roll the beef in this until nicely coated. Meanwhile add the oil to a pan and use to cook the beef and onion over low heat. As soon as the meat releases its juices add a pinch of salt and continue cooking until all the liquid has evaporated.

Now add the garlic and fry lightly for about 3 minutes before adding just enough water to barely cover the contents of the pan. Bring to a simmer and cook on low heat for 1 hour. adding more hot water, as necessary.

Serve on a bed of rice or couscous with the pan juices poured over the top.
