Ke'lagu'en Uhang (Prawns and Peppers) is a traditional Marianas Islands recipe for a classic dish of cooked prawns combined with bell pepper, onion, grated coconut and chillies that's served as a tortilla filling. This is a classic dish from the Mariana Islands (Guam and Nimi)
Ingredients:
1 green bell pepper, roasted, peeled and chopped
1 small onion, chopped
2 tsp crushed chilli flakes
juice of 2 lemons
225g cooked prawns, rinsed and drained
1 medium coconut, grated
salt, to taste
Method:
Combine the pepper and onions in a bowl with half the chilli flakes. Stir-in half the lemon juice then add the prawns and grated coconut. Season to taste using salt, additional lemon juice and the remaining crushed chillies.
