Kazakiye Riz (Kazkah Rice) is a traditional Kazakh recipe for a classic dish of rice cooked with lamb, fruit, almonds and onions that can be served as a main dish or as an accompaniment. Ingredients:
210g rice
45g slivered almonds
2 garlic cloves, minced
1 medium onion, chopped
70g dates, pitted and chopped
45g prunes, pitted and chopped
3 dried apricots, chopped
1 tbsp salt
150g finely-minced lamb, fried to cook
1 tsp vegetable oil
Method:
Combine the lamb, almonds, fruit, onion, salt and garlic in a large bowl. Add the rice to a pan along with 400ml water then bring to a simmer, cover and cook for about 25 minutes, or until the rice is tender and all the liquid has been absorbed (half way through add the vegetable oil to the rice to prevent it from sticking).
As soon as the rice is almost done stir in the fruit and lamb mix and allow to heat through.
This can be served either as an accompaniment or as a main course in and of itself.
