Katles (Spiced Beef and Potato Cakes)
Katles (Spiced Beef and Potato Cakes) is a traditional Malagasy (from Madagascar) recipe for a classic dish or snack of beef and potato cakes flavoured with ginger, onion, curry powder and herbs that's bound with egg and fried. Also known as katlesi in Swaheli, these cutlets are an adaptation of Indian Gudjarati katles (breaded potato cakes).
Ingredients:
500g minced beef
3 large potatoes, peeled and cubed
1 onion, chopped
4cm length of fresh ginger, peeled and finely chopped
4 garlic cloves, finely chopped
1 1/2 tsp salt
1 tsp freshly-ground
black pepper
1 1/2 tsp
curry powder
1/2 tsp dried thyme
1 tsp beef stock granules
3 tbsp fresh
coriander (cilantro), chopped
3 tbsp fresh
chives, snipped
5 tbsp plain flour
1 egg
oil for frying
Method:
Bring a pan of lightly-salted water to a boil. Add the potato cubes and cook for about 15 minutes, or until tender. Drain and set aside to cool then mash until smooth.
In a bowl, mix together the onion, ginger, garlic, salt, black pepper, curry powder, thyme, beef stock granules, coriander and chives. Stir in the beef then work in the egg to bind. Stir in enough of the flour to dry the mixture then take small pieces of the mixture and roll into walnut-sized balls. Flatten these slightly and set aside.
When all the mixture has been shaped, take a large frying pan and pour in enough oil to cover the base. Add the katles and fry on both sides for about 3 minutes per side, or until nicely browned and cooked through.
Drain on kitchen paper and serve hot with a hot pepper dipping sauce.
