This is a recipe from Odisha, India where consuming native red weaver ants is part of the native tradition.
Native red weaver ants are used in this recipe; After being caught, after being collected, the ants are crushed, collected in bags and washed. Once dried, they are ready to be cooked and eaten
As well as an accompaniment, this is also ofter served as a main meal accompanied by boiled rice.
Ingredients:
500ml (2 cups) dried red weaver ants
300g shredded coconut
2 tbsp coconut oil
4-5 small red chillies, finely chopped
Salt, to taste
4 garlic cloves, finely chopped
Mint and coriander leaves, finely shredded, to taste
Method:
If the ants are not pre-mashed, place in a mortar and poud well with a pestle. Add the coconut meat and pound to combine.
Add 2 tbsp coconut oil to a small pan. When hot add the garlic and fry for 30 seconds. Now add the chillies and cook for 90 seconds more.
Take off the heat and add to the ant and coconut mix, pounding to combine. Season to taste with salt, turn into a serving bowl, garnish with the shredded mint and coriander then serve.
