Kabaro au Carry (Malagasy Curried Beans)

Ingredients:

250g dried lima beans (or any other large bean)
60ml vegetable oil
1 large onion, chopped
400g tin chopped tomatoes
1 tsp garlic, grated
2 tsp mild curry powder (eg cape curry powder)
1/2 tsp freshly-ground black pepper
salt, to taste
oil for frying

Method:

Pick over and wash the beans. Place in a large bowl, cover with plenty of water and set aside over night to soak.

Heat a little oil in a pan, add the onion and fry for about 4 minutes, or until soft and translucent. Add the tomatoes, bring to a simmer and cook for about 9 minutes or until they begin to break down. Now stir in the garlic, curry powder and black pepper.

Drain the beans and stir into the mixture along with 1l water. Bring to a simmer and cook until the beans are tender and the sauce has thickened (for lima beans, about 80 minutes cooking time). Top up the liquid, as needed.

Adjust the seasonings to taste and serve hot.
