Kaak Malih (Yeasted Almond Biscuits) is a traditional Libyan recipe for a classic yeasted biscuit (cookie) made from a blend of flour, sugar and oil flavoured with fennel seeds, sesame seeds and orange flower water. Mix together the yeast and sugar to a smooth paste and set aside for 5 minutes, or until foaming.
Sift the flour and salt into a bowl then stir in the fennel seeds, sesame seeds, oil, orange flower water and yeast mixture. Blend to form a soft dough (add warm water as needed). Knead for 5 minutes then cover the bowl with a damp cloth and set aside for 60 minutes to rise.
When risen, knock the dough back then roll out on a floured work surface to about 1cm thick. Cut into crescents then arrange on a greased baking tray. Place in an oven pre-heated to 170°C and cook for about 15 minutes, or until golden brown and cooked through. Allow to cool on a wire rack before storing or serving.
