Jerk BBQ Sauce

Jerk BBQ Sauce is a traditional Jamaican recipe for a classic barbecue sauce of a chicken stock, beer and treacle (molasses) base flavoured with spices and plenty of chillies. The full recipe is presented here and I hope you enjoy this classic Jamaican version of: Jerk BBQ Sauce.

Ingredients:

1l chicken stock
720ml dark beer
1 large white onion, chopped
1 large red onion, chopped
2 large green chillies, roasted and chopped
2 bunches of spring onions, chopped
2 tbsp fresh ginger, minced
135g (tinned) chopped green chillies
2 jalapeño peppers, roasted and chopped
4 tbsp tamarind concentrate
150ml black treacle (molasses)
4 tbsp dark brown sugar
2 1/2 tbsp ground allspice
4 tsp freshly-ground black pepper
4 tsp cayenne pepper
2 tsp ground cinnamon
2 tsp ground nutmeg
2 tsp fresh thyme, finely chopped
3 tsp salt
3 tsp dark brown sugar
2 tbsp soy sauce
2 tbsp white wine vinegar
1/2 habanero chilli, finely chopped

Method:

Fry the onions in a little olive oil until golden (about 6 minutes). Combine all the ingredients (except the habanero) in a pan and bring to a simmer. Cover and cook gently for about 3 hours, or until reduced and thickened. Stir the habanero chilli into the sauce towards the end of cooking and continue cooking for 10 minutes.

Take off the heat, allow to cool slightly, then bottle. Store in the refrigerator until needed.
