This is a very traditional and unusual Jamaican drink made from the seaweed, sea moss (carragheen). The seaweed is really there as a thickening agent rather than to provide a flavouring, so don't be afraid to give this a try! Carragheen is a seaweed (a red alga in fact) found in the mid-shore of the Atlantic coast (and British coastal waters). It contains lots of agar and makes an excellent gelling agent and can be bought, dried, from many health food stores where it's sold as 'Irish Moss'.

Ingredients:

15g dried carragheen
1.3l water
1 cinnamon stick
2 tsp linseed (optional)
400g tin of condensed milk
a few drops of vanilla extract
freshly-grated nutmeg
dash of rum to serve (optional)

Method:

Soak the carragheen in plenty of cold water for 15 minutes. Then drain and place in a saucepan along with the 1.3l of water, the cinnamon stick and the linseed (if using). Bring the mixture to a boil and allow to simmer until it begins to thicken. Strain the mixture through a sieve and discard the seaweed, cinnamon stick and linseed. Return the liquid to a pan, add the condensed milk, vanilla essence and freshly-grated nutmeg. Bring to a boil, whisk vigourously then take off the heat and allow to cool.

Watch the mixture as it begins to cool and when it starts to set whisk it very vigourously. When cold whisk once more and place in the fridge to cool. Whisk once more before serving. You can add a dash of rum at this point. If doing so, whisk once more then serve.
