Jamaican Fiery Spiced Pork Marinade

Ingredients:

1 tsp crushed Allspice Berries
Black Peppercorns, To taste
2 dried Chipotle Chillies
6cm length Cinnamon Bark
5 tbsp Dark Rum
5 tbsp Extra Virgin Olive Oil
1 tbsp grated Fresh ginger
1 Garlic Clove, crushed
1/2 tsp freshly-grated nutmeg
1 tbsp Lime Juice
Sea Salt, to taste
3 spring onions, finely chopped
1 tsp Thyme
4 tbsp Unrefined Dark Muscovado Sugar

Method:

Soak the chipotle chillies in hot water for an hour then chop finely (any dried red chillies can be used but chipotle [Scotch Bonnets] are the best). Mix all the ingredients together and store in an air-tight jar. This marinade will keep in the fridge for several months but is best used straight away.

This marinade works wonderfully well with pork and also with strong fish such as tuna and swordfish. For the best results marinade cubed pork (or fish steaks) overnight, put on skewers (Alternate with strips of red pepper, onion, mushrooms or just about any vegetable) and barbeque/grill.
