Istarski krumpir (Istrian Potatoes)

This potato dish is filling, hearty, and it’s a meal in one or can be served as a side

Ingredients:

1kg of potatoes, cubed
100g pancetta, finely diced
2 tomatoes, diced
4 garlic cloves, crushed
10g flat-leaf parsley, chopped
1 tsp vegeta seasoning substitute
½ tsp freshly-ground black pepper
2 tbsp olive oil
125ml milk
125ml single cream
115g grated parmesan
ripe tomatoes, sliced for topping
1 tbsp extra-virgin olive oil

Method:

Pre-heat your oven to 180°C.

Combine the potatoes, pancetta, tomatoes, garlic, parsley, Vegeta, pepper, olive oil, milk in a large bowl and toss to combine then transfer to a large baking dish. Cover with foil, transfer to the centre of your pre-heated oven and bake for 30 minutes.

Remove from the oven and sprinkle over the grated parmesan. Top with the sliced tomatoes, drizzle with the olive oil then return to the oven.

Continue baking, uncovered, for 40-50 minutes, or until cooked through and golden on top.

Serve hot
