Vegeta is a classic spice and herb blend used throughout the Balcans. This substitute blend comes from Macedonia.

Ingredients:

1 tbsp salt
2 tbsp freshly-ground black pepper
1 tbsp hot paprika (optional)
2 tbsp sweet paprika
1 tbsp baking soda
1/2 tsp freshly-grated nutmeg
1 tbsp dried onion, minced
1 tsp dried garlic, minced

Method:

Combine all the ingredients in a bowl and stir to mix. Store in an air-tight jar until needed.
