Though wheaten bread is one of the most well known of Irish breads, the Irish climate is not rally conducive to growing wheat extensively and oats perform much better in the damp climate. As a result, it was oaten bread that was prepared and consumed on a daily basis and wheaten bread was reserved for high days and holidays.

Ingredients:

120g rolled oats
150ml buttermilk or sour milk
150g plain flour
1/4 tsp bicarbonate of soda
1/4 tsp salt

Method:

Place the oats in a bowl, pour over the buttermilk then cover the bowl and set aside to soak over night in a cool place.

The following day, sift together the flour, bicarbonate of soda and salt together and mix this into the soaked oats. Mix to a stiff dough and knead until smooth.

Turn onto a lightly-floured work surface and divide the dough in half. Roll each piece of dough into a round about 6cm thick. Transfer to a lightly-greased baking tray then place in an oven pre-heated to 180°C and bake for about 40 minutes or until well risen and golden brown.

Serve warm, spread with butter.
