Wheaten Bread

This is a classic Northern Irish sweetened soda bread that makes an excellent tea-time bread.

Ingredients:

140g strong bread flour
330g whole wheat flour
1/2 tbsp salt
1 tsp baking soda
2 tbsp caster sugar
60g butter
480ml buttermilk
60ml vegetable oil
1 tbsp buttermilk
1 tsp granulated sugar

Method:

Sift together the flours, salt, baking soda and caster sugar in a bowl. Add the butter and rub into the mixture with your fingers until it begins to resemble fine breadcrumbs. Form a well in the centre and add the oil and buttermilk. Stir with a wooden spoon until the mixture is completely moistened.

Turn the dough onto a lightly-floured surface and knead lightly for about 4 minutes. Transfer the dough onto an oiled baking tray and shape into a round loaf. Form a cross in the top with a moistened finger then brush the top with the 1 tbsp buttermilk and scatter the granulated sugar on top.

Place in an oven pre-heated to 200°C (400°F/Gas Mark 6) and bake for 30 minutes. Reduce the temperature to 190°C, rotate the pan and continue baking for a further 30 minutes. When done, the loaf should sound hollow when tapped on its base.

Transfer to a wire rack and allow to cool before slicing.
