Yucca is another name for cassava, a staple crop in Honduras. You need sweet cassava for this recipe. For best results, grate the peeled cassava tuber with the widest holes of a hand grater.
Ingredients:
200g granulated sugar
1 tsp ground cinnamon
1/2 tsp ground allspice
1/4 tsp ground nutmeg
1/4 tsp sea salt
675g cassava, peeled and grated
4 large eggs, lightly beaten
400g tin coconut milk
160ml Evaporated Milk
125ml strong-brewed coffee
2 tbsp butter, melted and cooled
1/2 tsp vanilla extract
400g tin Sweetened Condensed Milk, to serve
Method:
Pre-heat your oven to 175°C and grease a 33x22cm baking dish.
Combine sugar, cinnamon, allspice, nutmeg and salt in small bowl. Mix together the grated cassava, eggs, coconut milk, evaporated milk, coffee, butter and vanilla extract in large bowl until thoroughly blended. Add the sugar mixture to the cassava mixture; stirring until well blended. Pour the resultant batter into prepared baking dish.
Transfer to the centre of your pre-heated oven and bake for 35 to 40 minutes or until a toothpick inserted into the centre emerges clean. Transfer the dish to a wire rack and allow to cool completely.
To serve, either pour sweetened condensed milk over entire cake to glaze or top each individual portion with the desired amount of condensed milk.
