Home-made Tomato Puree

This is a classic way of making home-made tomato puree. You must use ripe tomatoes for the flavour. The type of tomato you chose, will affect how thick or thin your tomato puree will be. Pulpy tomatoes will yield a thicker sauce. I usually use plum (jam) tomatoes for this.

Ingredients:

1 kg (2 ¼ lbs) tomatoes
2 tsps salt
2 litres water

Method:

Rinse the tomatoes very well. Cut a 1.5cm (½ inch) cross slit on the base of the tomatoes (not on the stalk side).

Bring a large pan of salted water to a rolling boil over high heat. Add the tomatoes and continue to cook for 2 minutes. After this time, cover the pan with a lid, take off the heat and sit in a sink of cold water (this should come half way up the side of your pot.

Allow the tomatoes to cool in the pan for 10 to 15 minutes.

When cooled, strain the tomatoes in a colander and set aside to cool to room temperature. Using a knife peel the tomatoes then remove eye part on the stalk and discard.

Chop the tomatoes coarsely then add the chopped tomatoes in a blender and puree until smooth. (Do not add any water while blending.) Strain the resultant tomato puree through a fine-meshed sieve, pressing down on the pulp with the back of a spoon to extract as much of the juice as possible.

You can use the puree immediately, or pour into a sterilized glass jar, secure the lid and store in the refrigerator over-night. For longer-term storage, freeze in an ice tray the store in the freezer, where it will keep for 2 to 3 months.
