Home-made Salsa Lizano

Lizano sauce is a Costa Rican condiment developed in 1920 by the Lizano company. It is now a product of Unilever. It is a thin, smooth, light brown sauce. It is meant to be used while cooking or at tableside to flavor one's food when serving.

Ingredients:

1 to 2 dried chillies, such as guajillo
360ml water
1/2 small yellow onion
10cm piece thick carrot, chopped
2 tbsp granulated sugar
2 tbsp freshly-squeezed lemon juice
1 tbsp unflavoured vinegar
1 tbsp ground cumin
2 tsp fine salt
2 tsp molasses
2 tsp all-natural powdered vegetable stock base (optional)

Method:

Remove the stems of the chiles and then slice them in half lengthwise. Remove the seeds and fibrous connective material attaching the seeds to the chiles (this makes the chillies milder).

Pre-heat a 20cm cast iron or stainless steel frying pan or skillet over medium heat. Lay the chile pieces in the pan and toast, turning after about 2 minutes. Add the water and reduce the heat to bring the water to a simmer.

Simmer for about five minutes. Remove the chilli pieces from the pan and place in blender. Measure out 250ml of the chilli-infused water and add this to the blender with the chillies.

Add the onion, carrot, sugar, lemon juice, vinegar, salt, molasses, and bouillon (if using).

Blend until smooth. Taste for seasoning.

The resultant sauce will keep in refrigerator for up to two weeks.
