Home-made Chilli Oil

Ingredients:

20 garlic cloves chopped
4 tbsp Sichuan Peppercorn
25 whole Red Chillies
2 tbsp Red Chilli Flakes
1l Oil (I like grapeseed oil)
2 1/2 tbsp Korean Chilli Flakes
2 Star Anise
2 tbsp Salt
2 Bay Leaves (optional)

Method:

Place a dry frying pan over medium-high heat and use to toast the Sichuan Peppercorns, Red Chilli Flakes, and Whole Red Chillies for 3-5 minutes or until fragrant.

Place a saucepan over medium heat with the star anise and bay leaves. Add the toasted chillies and garlic to a large heat-proof container. Once the oil is hot pour into the container and add 2 tbsp salt. Mix well co combine then set aside to infuse for 30 minutes.

Remove the bay Leaves and Star Anise before blending the remaining ingredients with a high-speed blender for 1-2 minutes.

Pour it into a clean jar, and store in the refrigerator, where it will keep for up to 3 months.
