Haluwa (Carrot Sweetmeat)

Haluwa (Carrot Sweetmeat) is a traditional Tanzanian recipe (from the Island of Zanzibar) for a classic Arabic dish of grated carrots cooked in sugar, milk powder and arrowroot that's cooked until smooth and stiff and which, traditionally, is served with ginger-spiced coffee. Ingredients:

800g grated carrots
8 tbsp sugar
4 tbsp skim milk powder
2 tsp flaked almonds or toasted cashew nuts
generous pinch of ground cardamom
5 tbsp ghee
1 tbsp arrowroot

Method:

Add the carrots to boiling salted water and cook for about 5 minutes, or until done. Drain the carrots and mash. Meanwhile heat the ghee and ad the mashed carrots and arrowroot. Fry for 2 minutes then add the sugar and cook for a further 3 minutes. Add the skimmed milk powder and cook for 2 more minutes, stirring continually. Finally sprinkle the cardamom over the top and stir in.

Tip onto a plate and decorate with the flaked almonds or toasted cashew nuts. The dessert can be served either hot or cold and should be accompanied by ginger-spiced coffee.
