Guy Fawkes Gunpowder Casserole

Guy Fawkes Gunpowder Casserole is a traditional British recipe for a hearty stew of beef, carrots, onions and haricot beans cooked in a beef stock base flavoured with curry powder, chilli powder and mustard that makes an excellent dish for Bonfire Night. Ingredients:

675g stewing beef, cut into 2cm cubes
2 large carrots, sliced
1 large onion, roughly chopped
1 tsp curry powder
1 tsp chilli powder
1 tsp mustard powder
1 tbsp plain flour
1 tbsp beef dripping
salt and freshly-ground black pepper
100g cooked haricot beans
250ml beef stock

Method:

Melt the dripping in a pan and when hot use to fry the onions and carrots for about 5 minutes, or until just soft. Add the beef and continue frying until browned on all sides. Scatter the flour over the top and gradually stir into the hot dripping.

Now stir in the chilli powder, mustard powder and curry powder. Stir in the stock then season to taste with salt and black pepper. Bring the mixture to a boil then reduce to a simmer, cover the pan and cook gently for about 2 hours, or until the meat is tender. About 40 minutes before the dish is due to be ready stir in the haricot beans.

Serve spooned over a baked potato.
