Grilled Porcini

Ingredients:

4 large penny bun (porcini) mushrooms
3 tbsp melted butter
2 tbsp olive oil
1 garlic clove, mashed
100ml full-bodied red wine (eg Chianti, Bordeaux)
salt and freshly-ground black pepper, to taste

Method:

Wipe the mushrooms clean and slice quite thickly. Whisk together the butter, oil and garlic in a small bowl and use this to brush the mushroom pieces.

Season lightly with salt and black pepper then place on a heat-proof dish. Set under a hot grill and cook for 5 minutes then turn over and sprinkle the wine over the top. Place under the grill once more and cook for a further 5 minutes.

Arrange the slices on four serving plates and drizzle with a little wine sauce. Garnish with a little flat-leaf parsley and rocket (arugula) then serve with crusty Italian bread.
