Grapefruit Cake is a modern New Zealand recipe for a classic sponge cake flavoured with grapefruit and topped with a grapefruit icing (frosting). The full recipe is presented here and I hope you enjoy this classic New Zealand version of: Grapefruit Cake.
Cream the butter and sugar together until pale and creamy then add the eggs one at a time, beating well after each addition. Stir-in the juice and zest of the grapefruit then add the flour, baking powder and milk. Pour into a well-greased ring cake tin and place in an oven pre-heated to 150°C (300°F/Gas Mark 2). Bake for about 40 minutes until the cake is set.
Take out of the oven, allow to cool slightly then remove from its tin and place on a wire rack. Decorate with icing made from icing sugar, butter and grapefruit juice and zest.
