Gorraasa

Gorraasa (also Gourassa/Gorraasa/Gurasa) is a soft, spongy, Sudanese flatbread typically served for breakfast.

Ingredients:

250g Whole wheat flour
120g plain flour
1 tsp Baking powder
Water, as needed
Salt
Oil for cooking

Method:

Sift together the flours, baking powder and salt to taste into a large bowl. Gradually work in the water until you end up with a thick pancake like batter. Set aside to rest for an hour.

Once you see bubbles forming on the top of the batter, you are ready to make this spongy flatbreads.

Place a non-stick pan over medium heat. When hot, brush with oil then pour in a ladle of the batter, and spread out as you would if preparing a pancake.

Cook for a few minutes until the base is set (but be careful not to over-cook). Set a lid on the pan and simmer for about 4 minutes until the bread is cooked

Serve warm with your favourite spreads or stews.
