Ginger Prawns with Oyster Mushrooms a Classic Chinese recipe for a stir-fry of prawns, carrots and oyster mushrooms with bell pepper in a sesame, ginger, soy sauce, hot pepper sauce and chicken stock base.
Ingredients:
3 tbsp vegetable oil
3 carrots, sliced thinly
350g oyster mushrooms, sliced thinly
1 large red bell pepper, thinly sliced
500g large prawns, peeled
2 garlic cloves, crushed
fresh coriander (cilantro) leaves, to garnish
For the Sauce:
150ml chicken stock
2 tsp sesame seeds
3 tsp ginger, finely grated
1 tbsp soy sauce
1/4 tsp hot pepper sauce
1 tsp cornflour (cornstarch)
Method:
Combine the chicken stock, sesame seeds, ginger, soy sauce, hot pepper sauce and cornflour into a small bowl until the mixture is smooth.
Place a wok over hight heat and add 2 tbsp oil. Use to stir-fry the carrots for 3 minutes then remove the carrots from the pan and set aside.
Add 1 tbsp oil to the wok and fry the mushrooms for 2 minutes. Remove from the pan and set aside.
Add a little more oil if needed and use to stir-fry the bell pepper and the prawns with the garlic for 3 minutes, or until the prawns turn pink and opaque.
Stir the sauce once more then pour into the wok. Cook until the sauce bubbles then return the carrots and the mushrooms to the wok. Cover and cook for 2 minutes more, until well heated through.
Serve hot, garnished with the coriander leaves.
