Ghanaian Curry Powder

Like most African countries, Ghana has its own curry powder blend. Like Nigerian curry powder, it’s based on turmeric (a Madras curry powder therefore makes a good substitute) but what’s unique about Ghanaian curry powder is the addition of yellow mustard powder. Ghanaian curry powder also includes the more aromatic spices, fenugreek and fennel seeds as well as cinnamon, cloves and nutmeg. The chilli powder tends to be quite hot (dried piri-piri chillies) but you can substitute milder cayenne if you wish. A distinctive red colour is provided by the addition of Kashmiri chillies.

Ingredients:

1 tsp Coriander seeds
1 tsp Cumin seeds
1 tsp Black peppercorns
1 tsp Fenugreek seeds
1 ½ tsp Yellow mustard seeds
2 tsp Green cardamom pods (remove the seeds from the pods)
½ tsp Whole cloves
1 tsp Fennel seeds
2 tsp Ground turmeric
2 tsp Ground ginger
1 tsp Ground cinnamon
1 tbsp piri-piri chilli powder
2 tsp Kashmiri chilli powder (mostly for red colour)
½ tsp Freshly-grated nutmeg

Method:

Place a small, dry, non-stick pan over medium heat. Working one at a time, add the first eight ingredients to the pan. Fry gently until the spice begins to jump in the pan, toasts and turns aromatic (about 90 seconds to 2 minutes). Once a spice has toasted, turn onto a plate and toast the next spice.

When all the spices have toasted turn into a spice or coffee grinder and process to a powder. Now add the turmeric, ginger, cinnamon, Scotch bonnet chilli powder, Kashmiri chilli powder and grated nutmeg. Run the motor to mix the spices then turn into a jar and store in a cool, dry, place until needed.
