Ghana Green Marinade

This is the classic spicy Ghanaian green marinade that's typically used to flavour chicken before cooking. In character it's fairly similar in many ways to Caribbean green seasoning and the ingredients are just as variable (depending on what's available, really).
Ingredients:
100g (1 cup) spring onions, chopped
50g (2 cups) parsley, chopped
25g (1 cup) celery leaves, chopped
1 cup fresh thyme
50g (2 cups) holy basil, chopped
3 tbsp rosemary leaves, chopped
150g (1 cup) onion, chopped
1 tbsp fresh ginger, grated
75g (½ cup) garlic, chopped
2 green habanero chillies, chopped
½ tbsp salt
½ tbsp Maggi powder
Water or vegetable oil as neede
Method:
Combine all the ingredients in a food processor or blender (you will probably need to do this in batches). Pulse to chop then add a little water or oil as needed and process to a coarse mixture (do not add too much liquid you're not looking for a purée).
Once done, mix all the batches together and store in airtight jars in the refrigerator if you're going to use within a few days. Alternaively, the green marinade also freezes well. Place in ice cube trays, freeze until solid then transfer to freezer bags for longer-term storage.
