Versions of spiced vegetable rices are found throughout Africa. The ones from Kenya and Tanzania might be the most famous, but this recipe from Ghana is for a truly classic dish.
Ingredients:
2 medium green bell peppers, finely chopped
3 carrots, finely chopped
1 medium onion, finely chopped
3 garlic cloves, finely chopped
3 tbsps olive oil
4 tsp curry powder
360g (2 cups) long-grain white rice, washed and drained
780ml (3 1/4 cups) chicken stock
2 tsps salt
Method:
Heat the oil in a large pot over low heat. When hot add the onion and garlic and cook, stirring, until softened (about 6 minutes). Scatter over the curry powder, then stir in the rice. Cook, stirring constantly, for about 1 minute or until the rice is coated in the oil. Add the carrot and bell pepper and stir to combine.
Add the chicken stock then pour in enough water to cover the rice by 3cm (1 in). Bring to a boil and cook, uncovered, without stirring, until the surface of rice is pitted with steam holes and grains on top appear dry (about 8 minutes).
Reduce heat to the lowest setting possible, then cover the pan with a tight-fitting lid and cook 15 minutes more.
Take the pot off the heat and let the rice sit, covered, for 5 minutes. Fluff with a fork, turn into a dish and serve.
