Ful Medames (Sudanese Broad Bean Breakfast) is a traditional Sudanese recipe for a classic breakfast dish of broad (fava) beans in a tomato and onion sauce with feta cheese and rocket. Though best known from Egypt, ful medames is a classic breakfast dish in Sudan and South Sudan as well. Indeed, it's been called the national dish of Sudan. It is also a staple breakfast dish in Somalia and is commonly served in Ethiopia and Eritrea. In Sudan it's also called Sahan ful (literally 'a plate of beans'). It is often served as a salad comprised of a base of beans topped with hard-boiled eggs, onions, tomatoes, crumbled feta cheese and rocket (arugula) and accompanied with flatbread.
Ingredients:
400g dried broad (fava) beans, soaked in plenty of water overnight.
2 Tomatoes, diced
1 Red onion, diced
100g Feta cheese, crumbled
rocket (Arugula) leaves, to garnish
Sesame oil or extra virgin olive oil
Salt and freshly-ground black pepper, to taste
cumin powder
hard-boiled eggs, quartered
Method:
Drain the beans, transfer to a pot and cover with plenty of water. Bring to a boil over medium heat and cook for about 2 hours, or until tender.
Drain the beans (reserve the stock). Transfer the beans to a bowl and mash with a little of the reserved stock until you have a paste. Season to taste with salt, black pepper and cumin.
Transfer to a serving bowl and garnish with the tomatoes, red onions, feta cheese, rocket and eggs. Drizzle with sesame oil or olive oil and serve with flatbread.
