Fish in Vine Leaves

Ingredients:

5 medium whole fish (eg bream, tilapia) cleaned
2 tbsp olive oil
juice of 1 lemon
1 tbsp chopped fresh parsley
1 tbsp chopped fresh thyme
1 tbsp chopped fresh fennel leaves
3 anchovy fillets, rinsed
2 tbsp softened butter
3 sprigs fennel leaves, chopped
10 small fennel leaves
20 slices lemon
15 large vine leaves
salt and freshly-ground pepper

Method:

Wash and dry the fish, then add the oil, lemon juice, parsley, thyme, fennel and a pinch of salt and pepper. Beat together then dip the fish in the mixture, allowing them to marinate for two hours in the fridge (make sure you turn them several times). Remove the fish from the marinade and drain.

Meanwhile, mash the anchovies and butter together and spread this over the fish with a knife. Wrap each fish in the vine leaves and place, seam side down, on a baking dish.

Bake in an oven pre-heated to 180°C (350°F/Gas Mark 4) for half an hour. Serve immediately, garnished with lemon and fennel.
