Fish and Snail Sauce

This is a classic version of a sauce for giant snails or fish, as served in many fast food restaurants in Lagos. I have copied the original recipe as closely as possible, the only difference being that the original uses ridiculous amounts of MSG which I have substituted with Worcestershire sauce.

Ingredients:

600g tomatoes, chopped
400g onions, finely chopped
1 Knorr fish stock cube
50g Scotch bonnet chillies
1 tsp Worcestershire sauce
1/2 tsp curry powder
1/2 tsp sea salt
200ml vegetable oil

Method:

Combine all the ingredients in a pan, bring to a simmer, cover and cook for about 30 minutes, or until the tomatoes, onions and chillies have broken down and the mixture has thickened. Your sauce is now ready.

To serve as in a restaurant: In the meantime, prepare the giant snails by boiling and the fish by cubing the meat and frying or boiling. Add the meat to the sauce, cook for 5 minutes to heat through and serve.
