Firnee is a traditional Afghan recipe for a classic dessert of mink and sugar thickened with cornstarch (cofnflour) that's flavoured with cinnamon and rose water that's chilled and topped with pistachio nuts before serving. Ingredients:
500ml whole milk
200g sugar
4 tbsp cornflour (corn starch)
1 tsp ground cinnamon
1 tbsp rose water
pistachio nuts
Method:
Whisk together the milk, sugar, cornflour, cinnamon and rose water together in a saucepan until smooth. Place on the heat and bring to a boil, stirring constantly. As soon as the mixture boils, take off the heat and pour into a shallow serving dish.
Allow to cool to room temperature then transfer to the refrigerator and chill for at least 2 hours. When ready to serve, garnish with chopped pistachio nuts and bring to the table.
