Favourite Crockpot Chili is a traditional American recipe for a classic chili of minced beef and red kidney beans in a tomato-based sauce that's adapted to be cooked slowly in a crockpot. Ingredients:

900g coarsely minced beef rump (chuck)
1kg cooked red kidney beans, drained (tinned is fine)
880g tinned chopped tomatoes, drained
2 onions, coarsely chopped
1 green bell pepper, de-seeded an coarsely chopped
2 garlic cloves, crushed
3 tbsp chilli powder (or to taste)
1 tsp freshly-ground black pepper
1 tsp ground cumin
salt and black pepper, to taste

Method:

Brown the minced beef in a large non-stick pan. Drain off the excess fat (you can store this for gravy if you like) then transfer the meat to your crockpot before stirring-in the remaining ingredients. Stir well to combine then cover the crockpot and cook on low over night (between 10 and 12 hours).

Serve in bowls, accompanied by boiled rice.
