Fasooleyah Khodra bi Zeit (Saudi Green Bean Salad)
Fasooleyah Khodra bi Zeit (Saudi Green Bean Salad) is a traditional Saudi Arabian recipe for a classic salad of green beans, onions and chillies in a lemon juice and oil dressing. Ingredients:
450g fresh green beans, trimmed and cut into 3cm lengths
2 onions, chopped
2 tbsp olive oil
1 serrano chilli, finely chopped
60ml water
1/2 tsp salt
juice of 2 lemons
salt and black pepper to taste
Method:
Steam the beans for about 6 minutes, until cooked through but still crisp. Meanwhile, fry the onions in the olive oil until just softened and transparent (about 6 minutes).
When ready, drain the beans then add both the beans and chilli to the onions. Fry for 2 minutes then add the water and salt. Stir to combine and bring the mixture to a boil. Reduce to a simmer, cover the pan and cook for 7 minutes then uncover, increase the heat and allow as much water as possible to evaporate away.
Take off the heat, add the lemon juice and toss to combine. Adjust the seasonings, turn into a bowl and serve.
