Ingredients:
500g lentils
1 large onion, sliced
2 garlic cloves, finely sliced
1 bay leaf
250ml passata (tomato juice)
220ml olive oil
salt and freshly-ground black pepper, to taste
Method:
Pick over the lentils, wash them thoroughly then transfer to a pot and cover with plenty of water. Bring to a rolling boil then take off the heat and drain. Return the lentils to the pan, cover with fresh water then stir-in the remaining ingredients.
Bring to a boil, reduce to a simmer and cook for about half an hour, or until the lentils are completely tender. Adjust the seasonings to taste then remove the bay leaf and ladle into warmed soup bowls before serving.
