English Cottage Pie

English Cottage Pie: A classic English recipe for a savoury pie of beef, onion, carrots and herbs in a beef stock and tomato puree base topped with mashed potatoes and oven baked in a dish until golden on top.
Ingredients:
450g lean minced beef
1 onion, diced
3 carrots, diced
1 tbsp plain flour
generous pinch of ground
cinnamon
1 tsp mixed dried herbs
2 tsp fresh
parsley, chopped
360ml beef stock
1 tbsp tomato purée
4 potatoes, peeled, diced and cooked
60g butter, softened
240ml milk
120g grated Cheddar cheese
salt and freshly-ground black pepper, to taste
Method:
Add the beef to a large frying pan over medium heat. Fry for 1 minute then add the onion and carrot and continue cooking until the onion begins to brown (about 6 minutes). Mix-in the flour, cinnamon, mixed herbs and parsley and stir to combine.
Whisk together the beef stock and tomato purée in a bowl then add to the frying pan. Season with salt and black pepper then lower the heat to a simmer and allow the mixture to cook for 15 minutes, or until almost all the liquid has evaporated. When done spoon the mixture into a 22cm pie dish.
Mash the cooked potatoes then add the butter and continue mashing until smooth. Add the milk and whip until fluffy. Season with salt and black pepper then spread evenly over the beef filling. Sprinkle the Cheddar cheese over the top then place in an oven pre-heated to 200°C (400°F/Gas Mark 6) and bake for about 25 minutes, or until the top has browned and the cheese is bubbling.
