Empanadas de Atun Fritas (Fried Tuna Empanadas) a Classic Mexican recipe for a pasty made from a flour tortilla with a tuna, tomato, onion and chilli filling that are deep fried to cook.

Ingredients:

4 uncooked flour tortillas
400g tinned tuna
2 tomatoes
3/4 onion
4 chillies (serrano or jalapeño)
oil for frying
salt, to taste

Method:

Finely dice the tomatoes, onion and chillies. Mix with the tuna and add a pinch of salt. Use this mixture to fill the flour tortillas.

Fold the tortillas in half, sealing the tuna mixture in the centre. Fold over and press the edges with your fingertips to seal.

Heat oil in a pan. Once the oil is hot add the empanadas and fry until nicely browned and cooked through.

Do not allow to colour too much though.

Serve immediately.
