Egg Masala

This is a simple yet delicious curry of hard-boiled eggs in a tomato gravy base.

Ingredients:

2 small onions, chopped
2 green chillies, chopped
2 tbsp refined vegetable oil
1 tsp ginger paste
1 tsp garlic paste
1 tsp chilli powder
½ tsp ground turmeric
1 tsp ground coriander
1 tsp ground cumin
½ tsp garam masala
2 tomatoes, finely chopped
2 tbsp besan (brown chickpea flour)
Sea salt, to taste
25g (scant 1oz) coriander (cilantro) leaves, finely chopped
8 hard-boiled eggs, peeled and halved

Method:

Grind the chopped onions and green chillies together to make a coarse paste.

Heat the oil in a saucepan, add the onion and garlic paste along with the ginger paste, garlic paste, chilli powder, turmeric, ground coriander, ground cumin and garam masala. stir-fry the mixture for 3 minutes.

Now add the tomatoes and sauté for 4 minutes more. Scatter over the besan and salt. Mix well to combine and continue frying for another minute. Add the coriander leaves and fry over medium heat for another 2-3 minutes.

Add the eggs and mix gently to coat in the gravy. The masala should cover the eggs well on all sides. Continue cooking over a low heat for 3-4 minutes.

Serve hot.
