This recipe shows the later Indian influence on Kenya
Ingredients:
420g (2 Cups) White Rice
1/4 tsp Salt
4 tbsp Vegetable Oil
4 tbsp Pilau Masala
25g (1/2 Cup) Onions, chopped
1.1l (4 1/2 Cups) Water
Method:
Place a deep, heavy-based pan over medium-high heat and add the vegetable oil. When the oil is hot add the onions and cook until they become very dark and almost start to burn (about 10 minutes). Scatter over the salt and the Pilau Marsala then pour in the water and bring to boil.
Wash the rice in a colander until the water runs clear then tip into the boiling water. Let the rice cook over high heat, uncovered until the water reduces to below the rice (about 10 minutes).
Use a fork to fluff the rice, cover the and let simmer over low heat until the rice has dried up (about 5 minutes).
Take off the heat, fluff the rice once more then serve.
