Easter Trifle
Easter Trifle is a traditional British recipe for a classic trifle of black cherries over a Madeira sponge base flavoured with cherry brandy that's topped with vanilla custard, whipped cream, walnuts and mini Easter eggs. This is very much an Easter indulgence for the adults and is full of rich fruit flavours and ever so slightly boozy.
Ingredients:
440g tin black cherries, drained and pitted
210ml double cream, whipped
4 tbsp cherry brandy
4 tbsp black cherry jam
150g
Madeira fingers
1 chocolate flake, crumbled (or 60g grated chocolate)
1 batch
vanilla custard
walnut halves and mini Easter eggs to decorate
Method:
Spread half the Madeira fingers on both sides with the jam then sandwich together and cut into cubes before scattering in the base of your trifle dish. Sprinkle the cherry brandy on top then crumble the chocolate flake over the top before scattering over the cherries.
Meanwhile, prepare a batch of vanilla custard and set aside to cool before pouring (you want it still pourable and not set) over the top of the trifle. Set aside to cool then top the trifle with the whipped cream and garnish with the walnut halves and easter eggs. Chill in the refrigerator for at least 90 minutes before serving.
