Easter Brisket

Easter Brisket is a traditional American recipe for a classic beef brisket flavoured with onion salt, celery salt, Worcestershire sauce and liquid smoke that's slow roasted and which is typically served at Easter time. Ingredients:

3kg Beef Brisket; trimmed
2 tsp Onion salt
1 tbsp Celery salt
1 tsp Garlic salt
2 tbsp Worcestershire sauce
1 1/2 tbsp Liquid smoke

Method:

Rub brisket with the onion salt, celery salt, and garlic salt and allow to stand for about 30 minutes. Place in a roasting tin and pour the Worcestershire sauce and liquid smoke over the surface of roast. Cover and refrigerate several hours then drain off marinade then wrap the brisket, fatty side up, in heavy duty aluminium foil and seal.

Place in an oven pre-heated to 150°C (130°C fan/300°F/Gas Mark 2) and roast for 5 hours. Allow to rest for at least 20 minutes before serving.
