Durban Mango Atchar

Atchar is a spicy Indian pickle made from green (raw) mangoes in a spicy vinegar base. This, however is the local Durbanite version of the pickle and it's intended to be served as a starter with poppadoms or as an accompaniment to curries.
Ingredients:
10 green mangoes, cut into thick slices (do not peel)
Coarse sea salt (at least 4 tbsp)
6 green chillies, finely chopped
100g (1 cup)
pickle masala
½ tsp ground turmeric
3 tbsp
Durban masala
2 tbsp sugar
1 tsp ground cumin
1 tsp ground coriander seeds
5 garlic cloves, sliced thinly
1 ½ tsp ginger and garlic paste
365ml (2 ½ cups) malt vinegar
Method:
Toss together the mango slices and coarse salt in a non-reactive (plastic or earthenware bowl). I’m suggesting 4 tbsp salt here, but if you like it saltier add more. Set aside until the salt has completely dissolved then set the mangoes on a thick pad of kitchen paper to drain.
When the mango slices appear dry put on a baking tray covered with kitchen towels then set out in the sun to dry. This will usually take 1 to 2 days (depending on the strength of the sun). By this time the mango slices will be dry to the touch and will have shrunk.
Turn the mango slices into a saucepan and scatter over the pickle masala, turmeric, Durban masala, sugar, cumin, coriander and garlic. Stir well to combine then add the vinegar. Bring to a simmer then stir in the green chillies and mix.
Take off the heat and divide between sterilized jars. Secure the lids and allow to cool completely. These will last for up to 3 months in the refrigerator.
