Double Chocolate Cheesecake Muffins: A New Zealand recipe for a chocolate muffin containing chocolate chips that has a sweetened cream cheese filling added before baking.

Ingredients:

75g cream cheese (or you can use my home-made cream cheese recipe to prepare your own)
2 tbsp sugar
250g plain flour
75g chocolate chips
100g sugar
3 tbsp cocoa powder
4 tsp baking powder
1/2 tsp salt
1 egg, beaten
60g butter, melted and cooled
250ml milk

Method:

Beat together the cream cheese and 2 tbsp sugar until the sugar dissolves, then set aside.

Mix together the flour, chocolate chips, 100g sugar, cocoa powder, baking powder and salt in a large bowl. Form a well in the centre, then pour in the egg, butter and milk. Stir the ingredients together until just combined.

Divide half the resultant batter between 12 greased or lined muffin cups. Place 1 tsp of the cream cheese mixture on top then cover with the remaining cocoa batter.

Transfer to an oven pre-heated to 180°C and bake for about 18 minutes, or until nicely browned on top and a skewer inserted into the centre of each muffin emerges cleanly.

Allow the muffins to cool in the tin for 10 minutes then turn out onto a wire rack to cool completely before storing or serving.
