Daqoos (Tomato, garlic and coriander sauce) is a traditional Emirati recipe (from the United Arab Emirates) for a classic sauce of tomatoes, garlic and chilli powder. Daqoos is prepared throughout the Middle East and it's served as a combination of a sauce to go with rice or a dip to go with kebabs and barbecued meat. This specific version is Emirati, just because I've been editing Emirati recipes recently.

Ingredients:

3 large tomatoes, chopped
2 tbsp olive oil
4 garlic cloves
1/2 tsp Kashmiri chilli powder
1 tbsp (heaped) tomato purée
675ml water
Salt and freshly-ground black pepper to taste

Method:

Place a medium-sized saucepan over medium heat. Add the olive oil and when hot stir in the tomatoes and cook until they break down to form sauce (about 10 minutes).

Add in the remaining ingredients and simmer till the mixture becomes a thick sauce. Take off the heat and allow to cool slightly then turn into a blender and blitz till smooth.

Serve with rice or kebabs or meat.
