Ingredients:
1.5kg chicken
3 tbsp olive oil
300g green olives, pitted
2 garlic cloves
4 saffron threads
1 medium onion
2 preserved lemons
5g freshly-ground black pepper
Method:
Clean and skin the chicken then cut into quarters. Heat the oil in a pan then add the chicken, onion, garlic, saffron, salt and black pepper. Fry until the chicken is well browned all over then pour in 500ml water around the meat.
Stir in the olives and preserved lemons then bring the mixture to a boil and cook for 30 minutes, or until all the ingredients are hot and cooked through. Serve with rice and/or flatbread.
